Pork Chops with Mushroom Soup Sauce: So I did this entire meal in less than an hour and only used one pan for the whole thing, with no oven.  The crew didn't seem to mind as there were NO leftovers and it turned out to be a mighty tasty meal.

So I knew when I started looking over this recipe that I couldn’t do the “baked” part of Baked Pork Chops with Mushroom Sauce from the recipe on thespruceeats because well.. we don’t have a working oven on the boat and there isn’t much sun here in southern Costa Rica…so the solar oven isn’t a good alternative for cooking right now, especially pork chops.  But I was determined to cook a great meal, so I simply decided to use my cast iron pan instead of an oven, and fry the pork chops.  You can see the actual recipe for yourself at www.spruceeats.com/baked-pork-chops on this link.

But for my cooking, I was missing several key ingredients such as…an oven, the milk, paprika and fresh mushrooms for the recipe, so I started knowing I would have to make substitutions, but such is life on a sailboat when you don’t wanna pay premium prices for things like mushrooms.  So, here we go with my recipe and prep:  When I start to cook now, I try to read the whole recipe at least once and figure out which ingredients I have or don’t have an what substitutions I need to make in order to make something that will work.

Putting my ingredients together, you may notice the can of mushroom soup, canned whole mushrooms in the background.
After putting the pork into the spices and flour as per the recipe, I browned/cooked it with some butter in my cast iron pan.
Next I cooked the onions. Same pan as I’m also the crack dishwasher around the boat.
Next I added the chicken broth, mushroom soup, salt and pepper before adding the pork chops back into the mix.
Pork Chops and Mushrooms added, but they’re tiny whole canned mushrooms. After this I let the mix cook on very low heat for more than 30 minutes, making sure the pork chops were fully cooked.
Finished product with the pork chops cut in half to fit in the pan.  Great dinner that goes well over rice or any pasta.

So I did this entire meal in less than an hour and only used one pan for the whole thing, with no oven.  Yes, overall it might have come out much better with an oven but the crew didn’t seem to mind as there were NO leftovers and it turned out to be a mighty tasty meal.
